lazy afternoon meal; all you need are a few ingredients (that you probably already have!) to whip up scallion oil noodles. we love a lazy but delicious day! You can add protein or veg to this dish depending on what you have laying around for a quick, easy + delicious meal. This has always been a family favorite when you need something speedy that doesn’t break the bank + tastes hella good.

you’ll need:

• choice of noodles (2 packages)

• 2 tbsp soy sauce

• 1.5 tbsp dark soy sauce

• 5-6 cloves garlic, sliced

• 4-5 scallions, chopped long

• 1/4 onion, chopped

• large pinch of sugar

• 2 tbsp neutral oil

to make:

• chop garlic, onion + scallions

• cook choice of noodles and set aside

• heat oil in a pan/wok and fry garlic + onions, remove once golden + set aside

• add in half of your scallions, I like to do half up front and leave the other half more crisp + green by cooking later.

• add in your soy sauces + sugar

• add your noodles along with the rest of your scallions

• you can add more soy sauces to taste or if your noodles aren’t fully coated. add in your fried garlic + onion and that’s it!
